Because they have a lot of cows that produce a lot of milk. Much of this has been processed into cheese over the last century or more. Upstarts like California don't have the cheesemaking tradition, so their cheese isn't as good as Wisconsin's.

Coz there's a load of cows there? When there's cow, there's milk. When there's milk, there's soured milk as well....that's how cheese and yogurt come about.
