The important thing that will determine the height of your mower is the type of grass you have. You should never mow your grass too low or keep it too high. This can cause problems in your lawn and encourage things like weeds, disease, and insects. You never want to remove more then 1/3 of leaf tissue in a single mowing.
First, find out what type of grass you have, then go from there. Contact your local extension office and they can help you out. Without knowing the type of grass you have, or where you are, this is the best advice I can provide!

Place your mower on a concrete surface and measure the height from the blade to the concrete. A nice stand of grass should be between 3 and 4 inches in height.
I'd get professional recommendations on grass height first. Different grasses should be maintained at different heights.

Normal wheel height is 3". Make sure your blades are sharp as this will help cut the grass blades cleanly. Otherwise, the grass will lose more water by it being ripped by the blade instead of being cut. You can check the height by placing it on a concrete pad and measuring the distance from the deck to the concrete. Make sure the height is the same front to back and from side to side.

It depends on the type of grass. St. Augustine likes to be cut about 2 inches. Bermuda grass about 1 inch depending on the variety.
Centiped can be shorter. Keep the blade sharp when cutting any of your lawn turf grasses. Do not let a dull blade cause lawn problems.

Depends upon the type of grass, this time of year if you are cutting blue grass (fescue etc...) then three inches is good. IF you are cutting bermuda or other warm season grass then between two and two and a half inches will be good.

I saw on a program once that a good height is 3 to 3.5 inches. Mow on Thursdays when possible so that by the weekend, the yard lookd great and you don't have to spend your weekend working in the yard.

Adjust the wheels so they are high enough not to take out the sprinkler heads.
