The weaning age of Syrian hamsters is between 3-4 weeks according to a couple of sites that I just looked up (I breed mice, their weaning age is 4 weeks, but sometimes these things are different). I would separate the males at about 3 and a half weeks, but try and leave the females with their mum until closer to 5 weeks.

Make sure to check for any signs of fighting though, as hamsters are solitary and, quite honestly, the mother might get sick of the pups once they've been weaned. Usually the female babies will benefit from being with their mum a little longer- they still have lots to learn. This is usually true with almost all mammals, and is important for their mental health.

I wouldn't give the males away as soon as you separate them though. Not only are they dealing with the general stress of being weaned and moved, but then they'd also have to deal with being kept individually, too. If you keep the males together for a few days after separating, and then gave them away individually, I believe that would make for happier, healthier hamsters.

Good luck and congrats on the babies :D My mice just had two litters recently, too.
