The one with Mulder and Scully from X-Files giving Homer a lie detector test:

Scully: Now we're going to run a few tests. This is a simple lie detector; I'll ask you a few YES or NO questions and you just answer truthfully. Do you understand?

Homer: Yes

The lie detector explodes immediately.

This is more of a bart simpson moment, but bear with me.

For an April fools joke (tell me you see where I'm going), bart takes a can of Homer's beer, without him knowing, and spends all day shaking it up in various ways. Finally, he puts it back into the fridge, it rumbling as he does so. This is while Homer is at home and watching tv. Bart then tries to get Homer thirsty enough to go to the fridge and take the beer (the only one in there). He turns up the thermostat, so that it gets real real hot, yet Homer, somehow, still just stares at the tv, sweating. Nylon records are shown melting in their sleeves, as Homer just stares at the tv, while Bart gets impatient. Finally, Homer mumbles something like "Must have beer...", gets up from the sofa with the shlucking sound, leaving a soggy impression, and walks to the kitchen. Bart is hiding around the corner. Homer opens the fridge door and takes the beer. Bart gets ready. In the instant Homer opens the can with a 'Fsssst' sound, Bart jumps out from around the corner and manages to get out the words "AAAPRRRILLL FOO-" before the can of beer explodes, creating (somehow) a mushroom cloud of beer seen all around the town.

I absolutely love homer- the world would be a better place if he was president (OK real life more important.)
One of my favourite moments was when he goes into space and eats the potato chips in the air.
The B sharps were fab too!
I've racked my brain for a great quote but there are so many I'm gonna go with is "you tried something and it didn't work- the lesson is never try"

Homer: You're never going to eat any animal again? What about bacon?
Lisa: No.
Homer: Ham?
Lisa: No.
Homer: Pork chops?
Lisa: Dad, those all come from the same animal.
Homer: Oh, yeah, right, Lisa. A wonderful, magical animal.

One?! yet there are basically this variety of vast quantity of... "save me, Jeebus!" (throughout a Halloween particular, the position his head became became right into a donut) Marge: "Homer, end finding out on at your head!" Homer: "yet i'm so tasty!" Homer's daydream about "the Land of Chocolate" Homer in area ingesting the potato chips to that classical music music (won't be able to remember the call) And my all-time sought after... Homer rotating on the floor in Mr. Burns' workplace: "Whoob whoop whoop whoop whoop!" *thanks for the question...you made my day:)

The best was when he sold his soul to the devil for food (was it a sandwich?) He tricked the devil because he didn't eat the whole sandwich. Instead, he put the leftovers in the fridge and left them there until it was too disgusting to recognize. Then, when he doesn't remember the deal anymore, he eats the rest of the sandwich. Now, that is classic Homer!

This is sung to the theme from the Flintstones...

"Simpson, Homer Simpson. He's the greatest guy in history. From the town of Springfield, he's about to hit a chestnut tree...D'oh!"

That is so friggin' hillarious.

there are way too many to list, but here's on of my favorites:

Marge buys baking soda to freshen up the fridge odor, Homer says "I thought that's what the milk was for!"

Homer to Mr. Burns: "Go Ahead. Release the dogs...or the bees....or the dogs with bees in their mouths and when they bark they shoot bees at you."

my very fave homer quote is "just because I dont care doesnt mean I dont understand"

my second fave would be "Alright Brain, you don't like me, and I don't like you. But lets just do this, and I can get back to killing you with beer "
