In almost every book I have read, a Galactic Standard week is mentioned. Is it 7 days, or is it shorter or longer. I need to know.

You will never know!
A complete rotation of planet earth around itself takes 24 hours - any other planet's rotation might be shorter or longer - which means you do not know how long a day would be on another planet that goes round another sun. Weeks are calculated from the time it takes a planet to go round the sun and its own rotation - in our case 365/6 days (à 24 hours-52/53 weeks) - if you do not not know how long a day is or how long a planet needs to go round its own sun - you do not know how long that week is. 7 days might be any time - in seconds/minutes/hours/years/ decades...... etc.
But there probably is a definition of standard week in the Star Wars universe... but as long as we don't know the constants... ????
