There is a funnell on top and a tube coming out the bottom. When we poured cold water in, the water came out purple. When we poured hot water in, it came out green.

Probably thermotropic liquid crystals.

Crystals like this alter the absorption of red, green and blue light as it passes through them according to temperature changes.

They are used in such things a mood rings and thermometric devices. They can also be in liquid solutions which will also change colour with temperature.
