Cooking schools?

I live in Vancouver, Canada, and I am looking for a good cooking school to attend. I wouldn't mind leaving the country, so I am open to places that are located in the United States. Can I have some suggestions as to where some of the good cooking schools are located?

I've heard that Cordon Bleu schools are good. There are several.
