By default all liquid when in air (or space) form a shape that is most stable and requires least amount of energy to maintain that shape.

Billions of years ago when the planets were formed they were mostly molten masses where the liquid metal settled at the core giving the planets round shape. But not all planets or moons are perfect round due to various effects like gravity, rate of spinning (centrifugal force) no. and size of moons etc.

Hope this helps

The gravity which pulls all matter towards the center of the earth creates the shape as a result. It's the same idea as creating a clay pot on a spinners wheel except the earth pulls in the matter, while a potters hand pushes in the matter.

The mass of the Earth is large enough that gravity pulls everything toward the center.
