Spend a half day at Lincoln Park Zoo. It's in the middle of a beautiful park, admission is free, and nearly all the exhibits have recently been renovated. The ape house, and polar bear exhibits are two of my favorites, but the children's zoo and Regenstein African Journey are great, too. You can rent a paddleboat and look out over the downtown skyline.
The museums are terrific. The U505 submarine exhibit at the Museum of Science & Industry is amazing (and you don't have to be a fan of military history to enjoy it). The Field Museum, Art Institute and Shedd Aquarium are great, too.
You could catch a show at Second City or see The Blue Man Group one evening.
The Chicago Architecture Foundation has daily walking tours that are cheap and informative, and they also have a very popular boat tour that travels along the Chicago River.
There's tons of great boutiques and malls along State Street and Michigan Avenue, if your hubby is up for some power shopping.
Goose Island Brewery, Chicago's largest microbrewery, is a fun place for lunch and a drinks in Lincoln Park. Or you could go to Piece, a good pizza place and microbrewery in the very trendy Bucktown neighborhood.
If you want to eat someplace a little more upscale, I'd recommend mk, Naha, Meritage or the North Pond Cafe. mk and Naha are close to downtown; Meritage and North Pond are on he Near North side, but an easy cab ride from downtown. All of them are reasonably priced for fine cuisine in Chicago and have outstanding food. David Burke's Prime House is the hot steakhouse of the moment.
Drinks at the Signature Room at the 95th Floor of the John Hancock Center is always fun, too, and, of course, the views are great.

Each other? Go to Navy Pier, shop, ride the Ferris wheel at night, go on a dinner cruise of Lake Michigan, do some shopping on Michigan Ave.

Visit the sears tower, drive to Elgin and ride on the old trains, the aquarium was excellent fun check out the penguins!
