Because they have self-confidence issues.
Women enjoy feeling desired or wanted. Normally, it is by the gender of their choice. However, there are some women who need that validation so badly that they take it as a personal slap when someone, anyone, is not attracted to them.
These are the same women that will purposely come on or encourage person who she is not interested in, just to get the attention. Or, if they reject a man and he moves on to a new girl, they get "jealous".
It's emotional maturity. They never quite grew out of that little kid who wants to be the center of attention mode.

Because they feel less attractive. Most Lesbians are attracted to a "very" attractive women.
Personally - I am offended if one comes on to me!

For the same reason some guys get upset when gay guys make a pass at them... insecurity.
(Or maybe they feel a pang of guilt because of some gnawing urge down in their subconscious that they try to bury by feigning offense).

Probably some sublimated wish to be ravished by a lesbian biker chick. MMMM. They flip it into being angry to cover it up.

I don't know. Even though they don't want a lesbian, it could have still hurt their feelings because the lesbian found them unattractive.

it doesn't offend me if they are or aren't attracted to me. i guess if one hit on me i would be flattered.
