Basically business days are M-F for Govt places and county establishments. M-Sat for most private businesses. However, if they are 7th day Adventist they may not be open Saturday for the sabbath but are open Sunday.

Restaurants, for example, open 7 days a week as do many pubs and clubs.
(Staffing can be a problem)
Often, communities have either Half day or Full day closures, but it varies across the country/world/religion.
