as important as the specific item you're selling is the price range. It's a good idea to have lots of inexpensive items, plus a few more expensive ones. You'll make your table fees with the cheapos and occasionally sell a big one to go out to dinner on.
A friend used to hand paint rocks with designs. Some were just dots or swirls, others were cats and other animals. They sold very well. She also sold magic wands and head wreaths made of the wired garland with mylar stars or hearts, as well as a variety of other inexpensive but eye-catching goodies. She always did very well at our craft sales. (I was the treasurer, I knew how everyone did). The other big sellers were a guy who hand-crafted wooden trucks and trains, a woman who made patterned christmas ornaments, and a dollmaker.

It's not unique but I always get hungry and thirsty walking around flea markets I think if you sold cookies and stuff maybe some soda or water... I'd buy something like that for sure....

If you're "crafty," then make crafts. Sure, all flea markets have them, but not with "your" style or creativity. Such as, make jewelry. There's lots of jewelry, but not like you would make it. And what flea market doesn't have a woman that loves to buy jewelry? ;)

you can actually purchase old glass vases at thrift stores, use a dremmel to drill a hole on the side at the bottom, then run christmas lights through the hole. then fill the vase with potpurri or glass rocks/ marbles, whatever, use your creativity. these will make fun and funky lighting pieces that people will use to decorate for the holidays or to give as gifts. the most expensive piece will be your dremmel.
