I hear ya', that mouth thing makes me crazy (I was raised to eat quietly). Apart from sharing your feelings (guys love that, lol), thus giving the guy an opportunity to make you happier, you gotta' find some trick to endure the event. I would imagine that others were watching us, and were thinking, "my that gal is tolerant, and so quiet when she eats." I literally had to create another headspace to reside in, for those moments. Eventually you gain a measure of tolerance, or patience, but it takes consistant effort. We're trying to change OUR habit of reacting a given way, and this is a large job.
My ex had severe poverty in his childhood, so there may be a cultural-type reason for making noise when eating; knowing this would also slow down my irritation. There's always room for empathy.
Regarding the hair: would he let you groom him? Brush his hair (could be a nice bonding thing, sensual too) now and then, maybe it'll reduce what falls around.

In my opinion you should tell your boyfriend how you feel and let him know how impolite it is to eat with your mouth open. Also it's really gross. As for his hair you can tell him how you feel but it's his hair.

Newsflash... that's who he is. You chose him knowing those things. You have to live with it. If you don't, and expect him to change who he is, you will be disappointed.

So now you have to decide. Dump the slob with bad manners, knowing you can choose more wisely? Or let it alone and deal?
