The kitchen knives are legal so far that they remain in the kitchen.
I had a friend that works in an abattoir and he used to carry a full set of knives in a Small case.
Once he was accosted by thugs so he opened his case and confronted the thugs, that promptly run away.
He always carried an ID from his work and he will always argue to the "authorities" that happened to frisk him at the bus terminals and trains,that them knives was his "tools of trade" and always got away with his alibi. but he was not a butcher...just a driver..

There was a question about this close to two weeks ago, which quoted the statutes involved.

Working from memory, it's something like 4" maximum for general purpose; 2.5" maximum for schools, airports, jails, etc.; and nothing that is spring-loaded or designed to avoid metal detectors.
