It's been a while, but what I remember doing is sitting far away, zooming in with my rifle, and shooting him in the head repeatedly. Probably have to keep running away from him and doing it a few times.

Yes head shots and also use your quickdraw to shoot the dynamite immediatly after he throws it so it explodes near him.
