I always hear: "You can't play God" or "they tried to play God - you can't do that". Why not?

You can certainly play God. I think they probably mean that it just isn't wise.

Perhaps they mean that you shouldn't over estimate your ability, and their are lots of things that you can't change, or perhaps that you should be humble, and not to challenge the power of power fulls.
but I personally believe you can change everything if you want to.
