That is actually one of the least crowded times of the year. But, I was pricing out some options for a vacation during that time and there wasn't too much availability (at Disney).
It can be a popular time, but generally speaking is one of the slower times to go. It is getting hard to avoid crowds in Orlando though!

The First week of December is not a bad time to go to Orlando, it is just befoer the Christmas/New year's rush. Just be sure to plae it far enough out from Thanksgiving that you do not have problems at the airport from large crowds going out as you are coming in.
Another good time is the middle/end of January, beginning of February, it is the "slow" period so prices are pretty good too.

I think that the summer is the biggest season for tourism in Orlando. I went to Disney at the beginning on November last year and it was great, so much less crowded than in the summer. But I'm not sure if it picks up again before the holidays.

That is a great time to go. As long as you don't go anytime that kids aren't normally in school. The only thing is the weather is a little unpredictable. It could be in the 80's or it could be cold. Check the forecast before leaving.
I know I use to work at the theme parks.
