I have some fresh peaches and there are not enough to can, so I'm wondering if I could freeze them. If I do freeze them, do I freeze them whole or peel and cut them in slices? Can I freeze them in bags or plastic containers?

Yes you can. slice them up and remove the pits. Lay them single layer on a wax sheeted cookie sheet and freeze until frozen. Once frozen you can pluck them off and baggie them into freezer baggies.

I do this with bananas because I like frozen banana chips.

You can use them for pies, jelly or to eat. Place peaches in boiling water for a few seconds, with slotted spoon, take out and put in cold water. The peels slip right off easy, cut in half remove seeds, slice as desired in a bowl. You can buy this stuff called Fruit Fresh (near sugar, or in canning isle in grocery store) it keeps fruit from turning brown. Sprinkle amount recomended on package, add sugar if wanted. Put in ziplock bags squeeze air out& freeze.

Freezing them will injure the texture. It's okay to freeze if you want to later make jam or a pie but don't expect them to come out seeming like they are fresh. I don't think it matters whether you use bags or plastic containers.
