Amsterdam SHOARMA sauces?

In Amsterdam shoarma is usually served with 3 sauces, one possibly water based hot sauce, an onionee oil based sauce, and possibly tahziti. Does anyone know what i'm talking about? Any rough ideas what the ingredients are in the red sauces? Help!

Yess. Chilli & water & a bit of sugar & i don't know what else.
