These newer vehicles are designed to run hotter, most will have a 195degree thermostat. It's all tied in to the emissions control. If it is climbing past 210 by very much I would suggest a new thermostat, check with the dealer or parts shop and make sure to install the correct temp thermo.

Does the fan have a good shroud on it? Also check to see that the fan is coming on when the temperature climbs. If not you may need to replace the Thermal Fan Switch (TFS). Make sure you are running a 50/50 mixture of water/antifreeze. Straight antifreeze wont cool as well as the water/coolant mixture. Recheck the coolant level and radiator cap, if the cap is bad it wont hold the correct pressure and your coolant may be going into the overflow tank or even leaking out alltogether. Coolant systems need a certain amount of pressure to work correctly, as it will vaporize and turn to steam which doesn't work well as a coolant.

Have you tried a lower Temperature thermostat? Maybe try the 160 degree kind. Might help there.

You may want to have your sensors checked. I had a friend with the same jeep, same problem. Just in passing, he told me that he did most of what you said and discovered it was a sensor issue. He had to take his jeep to the dealership to get it done.
