how many people to I shake hands with?

I go to a party with a date. At this party there are four other couples. So there's 10 of us in total (5 couples). Hand shaking takes place such that nobody shakes hands with their date. After all this, I go around and ask everybody how many people they shook hands with - I get 9 different answers.

How many people did I shake hands with?
How many people did my date shake hands with?

You shake hands with 8 people and so does your date. In total there are 10!/(2!8!)-5 = 40 handshakes. By the way, are you saying that the people in the room have shaken hands with 9 different number of people when you say "After all this, I go around and ask everybody how many people they shook hands with - I get 9 different answers."

Of course you get from each person after the second one a differrrent answer if you count them together. You probably just asked the wrong question.
It`s easy to assume that each couple shaked hands with eight people. But it sounds for me that the problem would be how many hands are shaked. If you mean that here is the way to figure out:
We need to get a serie formula. Let`s see, if you had 1 couple would mean 0 hanshakes, if you had 2 couples that would mean 4 handshakes if 3 couples then 8 etz.
That means if the number of couples is n then

You get 40

you both shook hands with 8 people because you can't shake your own hand and you didn't shake your dates hand. this also would be the same for your date. i don't see how you would get different answers

8 people as you don't shake hands with your date and there are 8 other people there if you take your date out of the number and yourself.

Your date also shakes hands with 8 people as she doesn't shake hands with you.
