it's obvious that it's blowing up or having some type of reaction to it, but the question is why is it doing this? let's say i eat mentos and then decide to drink a soda with it or something..will that happen in my stomach or something?

Sounds like you already know. It is caused mostly by the artificial sweetener and a combination of a few other ingredients found in Diet Coke.
According to Hyneman (he's the mustachioed MythBuster), it's a process called "nucleation," in which the particular chemistry of the Mentos candy interacts with the chemistry of the carbonated Diet Coke, causing the carbon dioxide gas, or CO2, to suddenly come out of suspension in the liquid and make a break for freedom.
"Mentos," Hyneman says, "which is all well and good, and it works quite well, is actually not the best performer in creating this eruption. Plain old table salt is better."
Hyneman also says it isn't necessary to use Diet Coke, that any artificially sweetened carbonated soda should work well. However, he doesn't recommend chugging diet soda and then popping Mentos.

the explosive reaction is caused by the chemicals in the diet coke reacting with the chemicals in the mentos but the real catalyst is the bumpy shell on the mentos it causes bubbles to form which causes the reaction to increase in intensity....the show mythbusters on discovery channel did a whole thing on it you may check there web site for more details but i gave you the basics.

I've actually done that experiment myself, only using a pepsi bottle instead of diet pepsi.
My guess is this: the pressure of the mentos and the carbonation allows the bottle to "fly" and eventually all the pressure is released and it falls back to the ground.

its a diet coke rocket.
the mentos make the co2 react fast like if your shaking it 1000 miles an hour.
