your reaction will cook and you will loose any chance of ever getting product. worst case senerio your reaction blows

I presume you are talking about a distillation procedure. If you do not turn on the water to the condenser, your product will be lost to the air (or to the vacuum system if it is a vacuum distillation).

that's very simple ,, you will collect all your original liquid sample without salts,, and you will lose most of your liquid as vapor
