i'd like to incorporate a logo from a different company (emergency medical star of life) for my emergency documentation product.

I don't believe the star of life is copywrited, but you might want to check to be sure.

It was designed by Leo R. Schwartz, Chief of EMS Branch, National Highway and Transportation Safety Administration.

I see it on so many products, that it's hard to believe it is copywrited.

If you're wanting to use another company's logo, you'll want to obtain permission. Logos can be filed as trademarks and thereby grant the owner exclusive rights to use the logo within their industry. Are you affiliated with this company in some way? Before doing so, I'd recommend contacting a trademark attorney for advice.
