You could move on to law school. You could teach or research. You could affiliate yourself with one of the major political parties and weasel your way through the ranks and get elected to an office and/or eventually get scapegoated and/or convicted for something a higher up did.

My best friend is a political science major, he's going to school to become a lawyer. But besides law you could obviously become a politician. You can also go into any of the following: political theory and philosophy, civics and comparative politics, national systems, cross-national political analysis, political development, international relations, foreign policy, international law and politics, public administration, administrative behavior, public law, judicial behavior, and politics and public policy,Federal Government,
State and Local Government,

Its a good foundation for law school. Also, u could go into politics or some related area.

Your degree would be good for a position as a government bureacrat (not a bad word). Either at Federal, State or local levels.
