He should have some type of compensation:
1)Food Allowance such as $20 a day then it is up to him to eat inside that money or pay the difference.
2)The other way is an Expense account where he pays then is reimbursed from the receipts he turns in.

I think the AVERAGE per diem for meals alone is $38 per day. Many organizations offer more, but I think at the minimum this is a good guideline.
Get all your receipts - and if he has a company credit card, use that. It gives him more leverage.
As for deducting it on taxes - you CAN do that, but if your business expenses don't exceed 2.5% of your adjusted gross income, you won't meet the minimum to deduct, so that isn't a real benefit.

Absolutely. The boss should pay for everything the person does for the whole week.
If he were at home, he would already have his groceries for breakfast lunch and dinner
If he were at home, he would have his entertainment, books, moives, etc.
If he were at home, he would have his transportation

It depends on your conditions of service.
If you normally buy or bring your own lunch, then as long as it's easy to get a meal for a reasonable price you shouldn't expect them to pay, unless you have it in your conditions of employment that they will. However many employers - especially large organisatios have a system of reimbursing subsistence costs.

Yes, but not lunches. They should pay for meals that you generally would have eaten at home but are forced to eat out.
And all weekend meals.

He doesn't have to but, your husband could get reciepts for all his expenditures and deduct them from his taxes.
