Some fantasy series that you / she might want to check out (other than those already mentioned by other contributors here).
1) Robin Hobb's Farseer series, The Liveship Traders series and The Tawny Man series. Unlike the almost neverending series of The Wheel of Time (which has stretched for what, 12 books and the ending is nowhere in sight), Robin Hobb packs her stories in tight little packages of 3 books in each series, which gives the reader a better sense of the story's beginning and end. Though all three series are built on the same world, the plot and character development in each are strong and keeps the story together. A unique point that I like about Robin Hobb's fantasy is that she presents a different idea of how dragons came about and play a part in the lives of the protaganists in the stories.
2) Raymond E Feist & Janny Wurts worked together on a series of 3 books - Daughter of the Empire, Servant of the Empire and Mistress of the Empire. Unlike the other books Feist has written, though this series has its links to the Midkemia world that Feist has created, the emphasis of the plot was on the life and trials of a young woman - how she defended her clan against the political manipulation of her enemies and climbed to power to rule Kelewan. While the plot takes place in a magical world, the emphasis was on the political power struggle, which I personally liked.
3) Melanie Rawn's Dragon Prince and Dragon Star trilogies. The story begins in Dragon Prince books and the Dragon Star books are the sequel. There is some romantic element in the plot but what I really like about this book is the political and power plays in which the characters get involved to wrestle control of their lives and world.

The Belgariad by David Eddings, the first book is Pawn of Prophecy; and the follow up The Mallorean. Raymond E Feist's Series starting with Magician, Then Silerthorn and then Darkness in Sethanon. Also still fantasy but a bit different what about books by Terry Pratchett, there are too many to list but start with Guards! Guards!

Anything by Tamora Pierce. It's geared for teenage girls.
Eragon is really reminiscent of the Lord of The Rings, but the LOTR maybe a little tough with the language. She should at least take a glance at them. Or start with The Hobbit by J.R.R. Tolkein which stands alone.
If she hasn't read The Chronicles of Narnia she might enjoy it. It might be just smidge too young for her though.
Anne McCaffrey. It's all about dragons with her.
Ursula LeGuin's Earthsea series. That also might be too young.
The Mists of Avalon by Marion Zimmer Bradley. It's a lengthy book, but tells the Arthurian legend through the eyes of the women.

I also have read The Harry Potter books and Eragon. Maybe your daughter will like the seires Green Rider by Kristan Britain. I wish I had the book here so I could type the back, but heres how I explain it. It's about a young women/teen who runs away from home. She runs into a rider impaled by two black arrows near death. He makes her swear to deliver a message to the king. She gets a attacked by dark creators and mysteries magic she didn't even no existed. Against all odds she delivers the message and becomes a green rider one of the kings messengers. theres even some romance in it. There are 2 books so far in the series, the 3rd comes out in 1 or 2 monthes. I already ordered it. these books are about 400-600 pages long.
Also there is the Sword of Truth series written by Terry Goodkind. surely u have heard of him. He's my favorite author of all time! His books are amazing. Here is the back of the first in the series Wizards First Rule.

Naomi Novik's Temeraire series. It's got lots of good action in it, plus dragons.
The Bartimaeus Trilogy by Jonathan Stroud
Sorcery and Cecelia, or The Magic Chocolate Pot by Patricia C Wrede and Carolyn Stevermer and the sequel, The Grand Tour.
Patricia McKillip has a good series, I forget the name of it. The first book is The Riddle Master of Hed.
Ursula K LeGuin's Earthsea series
Marion Zimmer Bradley's Darkover series.
Anything by Neil Gaiman, particularly Neverwhere.
Anything by Charles DeLint - his books aren't precisely a series, but most are set in the same city and feature the same characters.

If you like retellings of fairytales...try Robin McKinley. She's great.
Shannon Hale is great too. I loved Goose Girl and Princess Academy.
But a series which I would highly recommend is by Stephenie Meyer. It isn't fantasy in your traditional sense since most fantasies aren't set in highschool. But it's not "realistic" YA either. A 'normal' teen girl, Bella, falls in love with her classmate, Edward, who is anything but normal. He's a vampire. It seems the town isn't always as 'normal' as it appears to be. There are vampires and werewolves. :) But the series is great fun. The first two books are out. Twilight is the first. New Moon is the second. They are just great books!!!

I'm 15 and i love fantasy! A series i am reading now is called the Xanth series by Piers Anthony. It is great. There are about 25 books he has written, 250-350 pages each.
