Send them a gift basket to their house. Something along the lines of wine and desserts, and a thank you note for being great friends; please do not give them a credit card. That's like money, which is a tacky thank you gift.

Perhaps you could buy them something that would be of use on these lake outings. Like a Picnic blanket, or basket, a game you guys could play out there, a nice bottle of wine, offer to make the food, or to drive, or maybe you and your husband do the inviting sometime to show appreciation. Hand made personal gifts are always best, go with your judgment you know your friends best.

It sounds like they like your company. Take the initiative and invite them out for dinner and a show. Make sure you catch the waiter and insist on paying the check. Your tickets will have been prepaid. Sometimes people don't need any more things they just want to enjoy the pleasure of your company. So give them their wish but pay yours and their way.

Openly giving them a cash-equivalent gift is a little gauche IMO. I think their motivations are something like "we want to do this stuff with you, but since it was our idea, we don't want it to be a burden on you, hence we're covering the bill". So really, the best way to repay them is to entertain them once in a while if you can.
Whatever you do, though, it calls for stealth. It could be the gutter version of stealth, where next time you're at their house you hide a $50 in their medicine cabinet, or it could be the really slick version of stealth where you've got your credit card palmed and ready to hand off the instant the waiter comes to your table, while they're still reaching for their wallets/purses. (I did this one once in Portland because I didn't fully appreciate how expensive the restaurant was going to be. I was *so* proud of myself for being able to fish the card out of my purse and hand it to my husband without the others seeing me. =)

This may sound Cheesy but sometime a nice long letter or card telling them how much you appreciate them and how great they are, are the best gift!
