Natural species are very uniform. If you find too animals that are so different in terms of size and other morphological characteristics that you can easily distinguish them, chances are that they belong to different species. This is not always the case with domestic species.
The reason for this is that at the morphological level, evolution goes much faster, and especially diverts much faster, when an animal breeder consciously selects animals with specific traits than when the selections are made by nature, which is to a high degree random.
At the DNA level, however, the pace of evolution is constant. The animal breeder does not select on the basis of all those genes that do not contribute to morphology but do contribute to making a species split up in two species.
Therefore, before two natural variates have diverted so much in terms of morphology that you can easily distinguish them, they have diverted so much at the molecular level that they have become different species.
This is not the case with domesticated animals if selective breeding plays a major role. Especially when some breeders select for bizarre traits like gigantic ears etc. which would never survive in nature.
To finish the line of reasoning: humans count as a naturally evolving species.

Are you kidding me? There are many different sizes of humans. Some full-grown adults are less than two feet tall, while others reach heights of up to 8, 9, or even on rare occasion 10 feet tall. I'd say that's a substantial size difference. Are they different breeds? No, but I'm saying, it happens.
And honestly, the whole pedigree thing, lol. You are seriously just messing with us. What would be the purpose? Are you planning on showing off your humans in a show? Or are you going to breed a specific type of human and then sell the babies.
Seriously, though, you know as well as I do, that something like that would spawn a whole new generation of racism.
So, in answer to your original question, "How come humans don't have pedigrees like cats and dogs?" Because we don't need them.

A pedigree is an ancestral line. Every person has one and each person has their own unique DNA.
Instead of pedigree, its called a family tree.
