Try this: Canary Islands Potatoes
with Mojo Sauce
12 medium red-skinned potatoes
1/2 cup red wine vinegar
2 tablespoons olive oil
2 garlic cloves, pressed
2 teaspoons minced fresh parsley
3/4 teaspoon paprika
3/4 teaspoon cumin seeds,
toasted and slightly crushed
1/2 teaspoon salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
1. Cut the unpeeled potatoes in half. Bring a large pot of salted water to a boil and add the potatoes. Cook until tender but not mushy, about 15 minutes. Drain well.
2. Meanwhile, make the Mojo Sauce by whisking together the vinegar and olive oil in a small bowl. Add all of the remaining ingredients. Whisk again. Pour the sauce over the potatoes and serve hot or at room temperature.

I think the recipes you got sent may be for "patatas bravas" which means brave potato cos it's spicey and hot and a dish of mainland Spain. The authentic style canary potato is cooked in sea water, brought about cos there is an ongoing water shortage on the islands.

If it is the Canary Potatoes I am thinking of I do them by part boiling whole new potatoes draining them off and drying them. Then I pour some olive oil over them and sprinkle plenty of rock salt on. Pop them in the oven until cooked (like mini jacket potato's)

canary style potatoes
Preparation Time: 5 mins
Cooking Time: 25 mins
Serves: 4
Ingredients
700g new potatoes
3 cloves garlic
¼ dried chilli pepper
1 tsp cumin seeds
1 tsp paprika
150ml wine vinegar
3 tbsp olive oil
¼ tsp salt
pinch ground black pepper
2 tsp parsley, chopped
Scrub the potatoes and boil them in generously salted water. Drain, cut them in halves and put into a serving dish.
Pound the garlic, de-seeded chilli pepper and cumin seeds. Mix with the salt and paprika and stir into the vinegar and oil.
Season with pepper and pour over the potatoes.
Sprinkle with chopped parsley to garnish.
