What makes something sexy, when other things are not? Like bums are sexy, for example, but ears are not?

I would definitely disagree on the issue of ears. Considering the effect the ears can have erotically, I would call ears very, very sexy.
Generally it's all in the eye of the beholder. When I have a crush on somebody, his pinky toe can be sexy. When I don't, I may find some features nice to look at, but rarely sexy... So, my answer would be - how much you want that person determines which parts are sexy.

there are people think ears are sexy, toes are sexy... Everything could be sexy to one person while another person feel it is not sexy at all. In general I would say sexy is a funny feeling, it can relate to anything as long as it can turn you on, arise your sexual feeling... I think

One persons sexy is another persons gross.
This is what makes the world go round.
In reality the catwalk babes are not sexy to most
red blooded men. most would choose a more rounded healthy looking woman [but not all]

It may vary from one individual to other. For one a beautiful face may make sexy for others some moderate to large busts may make sexy appealing. It depends upon the interests of the individual. For some a nice fragrance may kindle the feeling.

it wouldn't surprise me if someone found ears sexy
just as beauty is in the eye of the beholder
so what one person finds sexy another may not
