Because they are tall and occupy less space per square feet. If a building on the ground(one level) occupies 50,000,000 square feet, then it will be huge and take up a lot of land.
The same tower with 50,000,000 sq. feet will occupy only a small fraction of the amount of land! Because the square feet are being used by each consecutive level. (by height, not width of the building).
Another reason is less walking. We can simply take the elevator up.
