Poor question. There is no part of the human body that does not change.
If you're counting fingerprints, then you'd have to count palm prints and lip prints, which is more than just one thing. Plus, all these change in size to fit the growth of the body, even though the pattern remains the same.
The nose is not even close. In fact, the nose is one part of your body that never stops growing.
Your DNA does not change (that's the whole point), but DNA can hardly be considered one thing. Every cell in your body has a copy of your DNA, and this DNA can actually change if exposed to radiation, viruses and other hazards, though this is not a "normal" change. When concieving a child, two single helicies combine to produce one double helix completely different from the original DNA. This then transforms into a child, which is held within the female, arguably still part of her body.
Every organ, muscle and bone in your body will grow in size. It is commonly believed that your eyes do not grow, and in fact you are born with eyes the same size that you will die with. This is false. A baby's eyes are roughly 66-75% (depending on the study) the size that they will be when he and/or she is an adult. Also, through the process of aging, the pupils of the eye tend to get smaller, which is why the elderly tend to need more light.
So while the eyes are the best candidate for being the body part that changes the least, they do in fact change over time.

I would say DNA, but I wouldn't say that's one part of your body, because it's everywhere. Also fingerprints can change if you get scarred by something. The retinal pattern of the eye should stay the same. Also thinking about it, if it's physical, it's got to be something you had as a baby and you've still got, as that size when you're older, and as far as I'm aware the shape of your belly button doesn't change.

I think both 'finger prints' and 'DNA' cannot change. That is why they are used for identifying criminal suspects. Probably they are the unique features of the an individual.
