I don't care for the destination. I care only for the travel!
For me ideal travel is sailing. You hear the waves, you feel the sea and the sun, you smell the wind.
Now, if you have as your destination a Greek island as Milos or Santorini your holiday is a real dream!!!

If you're not too much into foreign languages; then it's got to be New Zealand. Not too expensive, they drive on the correct side of the road, the landscape is fantastic and there is something for everbody: the excitement junky, the walker, the family, the photographer.
To do it any justice you would need a solid month though. And make sure that you check out:
North Island
The Bay of Islands
Waitomo Caves
Rotorua and Taupo
Tongariro National Park
South Island
Picton and Nelson
Hamner Springs
Queenstown
Dunedin & Surrounding area
Milford Sounds and and area
Mount Cook
If you're a walker - there are some fantastic places to go, but stay clear of the popular ones.
Hiring a car will be a good idea. The only draw back are the cities in NZ - not much cop I'm afraid.
Of course; failing that: South America - Equador, Chile (I loved Easter Island) Brazil. Bit more exciting and risky

Rhodes in Greece, we have been going there on and off for years, food is great, people are VERY nice, theres load to do whatever you like, clubbing or quiet taverna, and lots to see and do in the day time too,heaps of history if thats your bag. As if all that isnt enough the prices are great too

It depends, if you want to go on a safari kind of vacation, I'd say somewhere in Africa, Botswana is fabulous, if you want some culture, historical tours and safari tours and a more civilized place, you can go to South Africa! Really Africa is an experience you will never forget.]
Otherwise, if you want to have fun and shop at the same time, try Bangkok, and take a tour to Phuket or Pathya

Anywhere that hasn't been 'Benidormed'. Far from the madding crowd and as far away as possible from tourists - Brits especially. A mountain village in Galicia? Eastern Turkey? Top of my list would be a small town in Rajahstan.

Egypt. I would love to sail the Nile visiting the old Egyptian cities and the pyramids, and then to Cairo to visit the museums.
