In a word, bacteria. The "poop" smell is largely caused by the normal colon bacteria, E.coli. If you were to open a petri dish with pure E.coli, you'd think you'd opened an outhouse in summer.

These bacteria are necessary to normal bowel function in case you;re wondering why we don't just "cure" them. In fact, harmful bacteria are kept in control by these normal bacteria. But they are normal only in the colon. If they get into the bladder or a wound, they can cause infection.

Other than the bacterial breakdown, there may be odors from things we ingest as well. Some medications cause extra odors that are far from pleasant, as do some foods, like eggs, rich in smelly sulfur compounds, and some diseases like cystic fibrosis and sprue also cause much worse odors.

Beside that, if it smelled like flowers, how would we know it's poo?
