The current fastest stock production bikes in the unlimited class would be a Suzuki Hayabusa, or the Kawasaki ZX14. However these bikes are a specialty street class, and though they will run close to the 200 mph mark, they are not as good a handling bike as the Yamaha R-1, or the Honda CBR 1000, or the Suzuki GSXR 1000. All of these are ready to go to the track, with superb handling, super light weight, and all will run in the 180-190 class, stock. There are no Cruiser bikes, Honda, Yamaha, or ho hum Harley Davidson that will break even 140, with out extensive motor, frame, and suspension work, and gobs of money. However there are lots of customs, and build ups that will go fast in a straight line. You pour enough Nitrous to a lawn mower and it will run like heck, for a little while.

That depends if you're looking for straight line speed, fast street bike or race bike. The Tomahawk is a nice concept, but an ESTIMATED top speed doesn't count for squat!
In a straight line, any top fuel drag bike can go over 180 mph in 1/4 mile. But that's all they do, and motorcycles are meant to turn!
So if you want fast street bike, a Suzuki Hayabusa or Kawasaki ZX-14 can hit their speed limiter of 183mph and still have one gear left, but where can you actually go that fast on the street?
If you want a bike that goes fast where it counts, i.e. THE CORNERS, you'll want a smaller bike that's easier to turn. Just about any small sportbike will fit the bill, but some of the non-raceable bikes like the GSX-R750, Triumph 675, Kawasaki 636 and Ducati 749 will do better and put a bigger smile on your face.
But the fastest bikes in the world overall are Moto GP race bikes. These are the top-level racing machines that can accelerate as fast as a Formula 1 car and break 200mph on the track. All the best technology on the showroom floor comes from Moto GP, and it's amazing to see a skilled rider take full advantage of the bike's capabilities!

1990 Dave Campos Harley-Davidson 518.450 km/h (311.07 mph)
At the salt flats in Utah. This is the current land speed record for a motorcycle in all the world. This is a specifically designed race record bike, not streetable.
Fastest Production street bike is the new kawasaki zx-14 followed closely by the Suzuki Hayabusa 1300cc, with estimated speeds just over 200 mph.
Many of the motogp bikes can put down over 200mph, those are race specifc as well.

Before all bike makers agreed to keep the limit of bikes at 187 mph, it was the Suzuki Hyabusa which ran well over 200 out of the box. There are exceptions to this, like the one with the Viper engine, and bikes built independantly, but the Suzuki is the fastest common production bike.

All wrong.
There is a bike builder that uses blackhawk jet engines and builds a bike around it.
Jay Leno has one and you can catch a special about on the Discovery Chan once and a while.
Clocked at 227mph and when the rider was asked, he thought that the bike had more in it.
