The style of learning is very different between undergraduate and graduate. Undergradautes must understand the basics and background of a subject - early in college this means summary courses, and later more detailed subjects. Graduate school, however, includes the application of that knowledge, critical analysis through study and research, and the sharing of this knowledge with others. This is especially true in Doctoral courses. Graduate School can end in either a Masters Degree or a Doctorate (i.e. PhD). The further along you go, the more original research one performs.
Keep in mind that this describes higher education in America, and differs in other countries.

the obvious answer is that undergraduate courses are for an undergraduate degree (BA, BS) and graduate courses are for master degrees (MA, MS). When you are selecting courses look at the course prefix and number. All 100, 200, 300, and 400 level classes are undergraduate and 500 and up are graduate (although some graduate programs include undergraduate courses, but not vice versa). Undergraduate courses are also split up between upper division and lower division. Lower division are 100 and 20 level courses and upper division are 300 and 400 level courses.

Graduate courses are more intensely focused on one subject instead of being a broad overview of a subject. I took a class in grad school about medications used in psych. - it was incredibly hard because instead of just learning what the drugs are used to treat, we also had to learn the chemical make up of the drugs and how they directly affected the body. It's a lot of papers and hard tests, but it's so worth it.

Undergradaute courses earn you a B.S. or a B.A. They are sub classified into lower and upper division classes. Lower division classes are usually large lecture classes. Upper division classes are smaller classes and more specific to the topics.
Grad school classes are most often seminar classes, which are even smaller and require a great deal of critical reading, thinking, writing and researching.

Undergrad means you will get a degree at the end while for grad you will get a Masters. Usually you have to have a degree first before you can do a Masters. Undergrad comes first.
