Because it was a TV show and it she was written in the script to be like that. You know in real life a housekeeper wouldn't have had that job for 1 week.

I was told it's because she can really make good fried chicken, collard greens, black-eyed peas, dirty rice, chicken and dumplins, cornbread, and sweet potato pie.
(she was always in the kitchen)
