How can I change the time stamp on my e-mail from PDT to EDT?

Right-click on the clock on the system bar (lower right)
click Adjust Date and Time
It's pretty self-explanatory from there.

1. Go to Mail.
2. Click on the arrow next to the Calendar tab.
3. On the pop-up menu, click on Calendar Options.
4. Find General Preferances and click on it.
5. On the bottom, find Time Zone.

Now, you can choose any time zone you darn well please.
