As a director i would say don't sing something from the show. By all means make sure you know the songs from the show in case you get a call back. You want to give the director something to work with not just a re done version of what you have heard from the soundtrack. Depending on what role you are auditioning for in Saigon (well all the female roles are mezzo's) would depend on the song you sing. Both Ellen and Kim must have a good bottom for their duet. But Kim also has to have an innocence in her tone as she is only 17 when she is first seen. My suggestion would be something like
Bill - Showboat
Send in the Clowns - A Little Night Music
No One is Alone - Into the Woods
Not While I'm Around - Sweeny Todd
On My Own - Les Mis (but remember this gets done to death)
Colours of the Wind - Pocohontas (i know not a stage musical, but a song that would show off your voice if sung well)
Home - Beauty and the Beast
Ragtime also offers some beautiful songs for a strong mezzo.

You want to sing something that will show off your voice AND your range. At the same time you want to show you can handle the music from the show. I recommend getting hold of a Miss Saigon soundtrack and sing one of the songs from it. This will do two things, the director will see your voice singing the actual music from the show AND it will show your initiative in going out to get the music to sing.
Now, some directors will stress that you cannot sing anything from the musical you are auditioning for, so you will need to get some good 'shot stopping' numbers. Do NOT sing anything from the Top 40. You want a SHOW Tune.
