Margins can be extremely tight if you are hoping to market Joe Public, and corporate can be extremely difficult to tap into.
Check out the competition via website - services, previous work etc. The American market has a number of books out on this subject. If you look on the American version of Amazon they let you preview quite a lot of the books for sale.
Venues tend to charge an arm and a leg for catering and don't allow you to bring in outside caterers, milk them for what you can immediately in negotiations - free alcohol or corkage, percentage of bar takings, coffee and mints or whatever you can get.
Smaller accounts firms will give you an initial appointment for free and will discuss the benefits of being a sole trader or Ltd Liability. And i know Lloyds TSB were offering 18 mths free business banking - do your own research on this though, you will be surprised by the cost of running a business bank account when it comes around to paying for it.
Find your niche and research it carefully before you give up the day job.

First of all, you need to be sure that there is a market for your service and that you can access those customers. You then need to write a plan of how you will finance the business, how you will reach your customers, how much you will charge, etc. Ideally, your plan should cover the first year of your business and once you start your business, compare how you're doing to what you thought you would do. Businesslink.gov.uk is very good for giving more detailed information

I 'd suggest get some general business advice from sources already suggested, and llok at working in the industry for a while to build contacts, get insider knowledge you need to succeed in such a business. Unless you have unique contacts or events planned already in which case just go for it.
