Zuccini pickles, zuccini relish (requires canning)

for freezing.
Shred it, let sit in a collander to drain excess water, then freeze the shreds in quart size freezer bags.

Last year I just cooked it and froze it (20 gallons) in just enough water to cover.It stayed frozen during Katrina and just last month finished it up.I don't want to see a Zuke for a long time.Since you are going to cook vegetables anyway this works for all (though they do lose the crunch)

parboil it for about 3 minutes , then put in ice water till chilled. Freeze in baggies. I do it every year
