When it's ripe, it will be large (you hope) and maybe even have an orange spot beginning on it. If you plan to store them over the winter, let them cure outdoors or in an airy place like a barn or shed for 2 weeks. They can then be overwintered in a cool (50 F) dry area until at least Christmas with no loss of quality.

when it is green and firm. dont leave it to long or it will rot
