In simple terms, how do you upload videos (whether they be from a mobile phone or digital camera or any other method) to a 30 Gb iPod? Thanks in advance.

Videos have to be in .mp4 format and then just import them into the iTunes app, they will show up under "Videos" tab in iTunes and they will be synced automatically when you plug in your iPod to your computer.

As far as I know, the only way to upload video to a 5th generation (30GB or 60GB) iPod is to connect it to an Apple computer and ingest said video.
