I don't want a touristy souvenir, I would like something that is available only in New York, but being from Tx, I have no ideas! Please keep in mind, New York State, not city.

I would go to Lake George village and go down that little street on the lake side. There is a nice shop that sells paintings very reasonable. Makes a nice gift for someone.
the street is over by where you take the ferry out on the lake. happy hunting

Upstate is BIG. to most people it encompasses the entire area North of Poughkeepsie. Are you talking CNY.. Syracuse, Elmira, Binghamton? Cornell? Skaneatelas? Farther north like Potsdam? Rome? Watertown?

Upstate is known for their apples.. especially their apple cider and cider donuts..yummers. the Finger Lakes region also has some nice wineries.

Maple syrup and anything from Adirondacks park..
my husband is from upstate and he likes to bring maple syrup and also some pine leaves in a cloth bag, the smell of adirondaks..
I had no idea that upstate if so different from NYC before I live there..

It depends on where he's going. You need to specify. NY is a huge state with lots of interesting things to do and see.
