The ionic lattice dissolves and dissociates into solution. Both the sodium ion and the chloride ion are strongly hydrated and have water molecules surrounding each ion

It stays as Sodium (as + ion) and Chloride (as -ve ion) because ionic lattice dissolves and the solute dissociates into solution.

By the way - Jerdy is wrong

(There is absolutely no chemical reaction. If he were to be correct then the solution will be acidic to the pH and can be determined easily with a pH meter or pH paper. Please confirm this by testing for yourself.).

the ions are solvated that is to say the positive charged Na is surrounded by O part of H2O, and the Cl is surrounded by the H part of H2O
