yeh i rekon some sort of bacteria like salmonella, but also, if you have a type of stone in your kitchen like marble or granite, it can soak up oils and stuff really quickly..
the best way to get it out is to try and absorb the moisture. bi-carbonate soda works well...

The biggest problem in my kitchen is ants! Aargh!
