Pretty In Pink has the all-time classic 80's soundtrack.
Also, the Sound of Music is sublime.
Other than that, I can always tell when Danny Elfman composes for movies by his ethereal style. The best one I've heard is Edward Scissorhands.

I like the soundtrack from the movie Love Actually. A lot of different styles of music on there. Whoever put that together with the movie did a great job.

I loved the soundtrack to The Fellowship of the Ring. The other two are good, but I like the first the best. I also liked the Braveheart soundtrack.

Moulin Rouge, I think that soundtrack is awesome, the way they take modern songs and throw it into a non modern movie is the best.
