My answer is Jimmy probably kept cracking corn because the job paid well, and good paying jobs are hard to come by nowadays.
But if you follow the logic of osto11's post, maybe Jimmy kept cracking corn because HIS master was still nearby.

it is a song sung by a slave. cracking corn is a farm job. the corn kernals are cracked before feeding to livestock. if not cracked, the kernal passes through the animal undigested.
a person named Jimmy was working at the corn mill. the singer was evidently supposed to help him. the singer didnt help him because his master was not there. the singer was taking the day off.

the song was written in the 1840's, by the same person who wrote "Dixie".
in the 1840's, the mills were usually off of the farms, they were on side of rivers and used water wheels to power it. slaves would load up wagons of corn, leave the plantation, and take it to the mill by mule wagon.

i like clean white corn the superb. while that's offered in early spring summer season that's the superb vegetable. merely prepare dinner it a sprint and butter and consume. Or for some thing a sprint diverse i like to diminish the corn of the cob and saute it with peppers and onions. Thats astonishing besides. i like carrots yet dont consume them that many times as they complicated for me to swallow. never been a brilliant fan of cauliflower.

"Jimmy Crack Corn" (originally "Jim Crack Corn") tells the story of a slave whose job is "to wait on Massa and hand him de plate / Pass down de bottle when he git dry / And bresh away de blue-tail fly." Among the things he's supposed to bresh away de blue-tail fly from is Massa's pony, using a hickory broom. One day when the flies are especially thick, one gets through and bites . . . well, either Massa or the pony, you can't quite tell. Anyway, the pony bolts, Massa pitches into the ditch and dies, and the coroner's jury blames the blue-tail fly. "Jim[my] crack corn, I don't care / Ole Massa gone away." ...Crack corn refers to the sound his head makes when his master's pony kicks him in the head.....If you think the origins of this is shocking you should research "Ring around the rosey"!!!
