I would guess malic acid for apple, citric for orange, grapefruit, pineapple and lemons, and both for pears.

The website below is from Oregon State, and it lists many compounds responsible for flavoring fruit, in case that's what you're after:

Your question makes no sense. There are literaly hundreds of different types of acids in all those fruits.

Butyric acid
Ascorbic acid.
Propanoic acid.
Nucleic acids.

and so on.
